Poached Salmon

For lunch one day while enjoying the Fat Flush diet, I whipped this one together.  It's very tasty and Linda insisted that I add it to the web site.

Salmon steaks, cleaned and rinsed
Two large mushrooms thinly sliced
2 lemons, one cut in half and the other thinly sliced
1 tomato cut into 1/4" slices
Parsley, chopped
Coriander to taste

Skin the salmon steaks and lay them down in a large pan.  Top with mushroom slices, tomato slices, lemon slices and parsley.  Cover pan and cook quickly on the stove.  Do not over cook.  Do not turn.  Squeeze remaining lemon over salmon when serving, add coriander to taste.
